Do you already know our Novell with Truffle? A goat cheese of soft paste and white flowery skin, we incorporate black winter truffle (tuber melanosporum). A top quality truffle from the Sierra de Busa, between Solsona and Berga.
To elaborate this Novell with truffle we collaborate with Pere Muxí, from Sota Terra, a company dedicated to the production and commercialization of black truffle. They provide us with the best black truffle at its optimum point and that they collect every week, so that we can make this special cheese!
And as NEW this year we have incorporated a new collaboration with Bodegas del Bages, Abadal, to find the perfect pairing with one of their white and one of their black wines. In our Instagram profile, Marta de Abadal recommends and explains you well these two selected wines, for our Novell with truffle, with a subtle and delicate truffle aroma, nothing loaded, and soft and creamy texture.
