Alpí cheese made in switzerland ans matured in Catalonia
We have selected the best milk from the alpine pastures of Switzerland, and together with L'oriol and the Swiss cheesemaker they have developed the recipe for this very special cheese, made only with spring and summer milk and a very limited production we find this exceptional product . In every bite we can find the aromas and flavors of the Alpine grass.
When it arrives in Catalonia, it continues its maturation process where we will treat the skin with a mixture of water with salt and aromatic herbs to bring the aromas of the Moianès forest to its skin and take care of it for 5 more months until it achieves its special flavor and aroma.
INGREDIENTS: Raw cow's milk, salt, rennet, lactic ferments.
WINE PAIRING: Young white or cava.
IN THE KITCHEN: A cheese that impresses and captivates raw, but that undone delights lovers of rice, pasta and especially fondues!
